Mace or Jawantri is derived from the same nutmeg tree that also supplies us with nutmeg. Mace refers to the membrane that surrounds the seed. The seed itself forms the nutmeg once dried. The dried membrane, called mace, is delicate and hence disintegrates when cooked for too long. You should use East End Mace to give the finishing touches to a meal. It can be used for both sweet and savoury dishes.
